Grapes are crushed and destemmed. Fermentation in heat regulated tanks separately for each variety . Post fermentation maceration during 4 weeks with many pumping over and rack & return process. Must is run off and pressed pneumatically. Malolactic fermentation, then blending 8 months ageing.
Our Côtes du Rhône Vieilles Vignes stems from south exposed vines on this typical land of rolled pebbles located in a green setting above the Chateau . Limited yield, average age of vines 35 years old. Intense deep purple red robe revealing a subtle nose of blue berry, black currant and cherry and licorice and spicy notes of cocoa and fresh pepper. The mouth is sleek and elegant, with fine tanins and a long aromatic finish .This racy and complex wine may be laid 3 to 5 years. We advise to drink at 18°C.
